MimicCreme of Broccoli Soup

Ingredients:

1/2 Onion (small) chopped

2 Tbs. Butter substitute

1- 1/2 cups Unsweetened MimicCreme

1Tbs. cornstarch

1- 1/2 cups cooked Broccoli

1 Tbs. butter substitute

2-3 radishes, sliced thinly

In a small saucepan, sweat onions in butter substitute to develop flavor. Add 1 cup MimicCreme, bring to a light simmer. In a separate bowl add cornstarch to 1/2 cup MimicCreme, stir until smooth. Slowly add MimicCreme/ cornstarch mixture to the onions/MimicCreme mixture. Raise heat to medium, stirring constantly until mixture comes to a boil and thickens. Add 1- 1/4 cups broccoli and stir. Puree mixture in blender. Use caution, mixture will be hot! Pour mixture back into saucepan, heat slightly and add remaining 1/4 cup broccoli and butter substitute and salt and pepper to taste. Garnish with radishes.
